Julie - I have three children. My youngest Katie is my refluxer. My first Ben was very colicy and is ADHD. My middle Jakob is pretty easy going. Katie had it bad as a baby no sleep for two years. She was on Nutramagin, Prevacid and Zantac. Thought we were through it but after age three it came back big time. After her scope she was put on Prevacid 45mg a day and mylanta as needed. Scope was in Sept. Showed damage in stomach and espophogus. It took about 7 months of medication and Reflux diet for her to start feeling better.
Well I was desperate for Katie's birthday - she was having a flare

I made a soy ice cream sandwich cake

I got the so delicious ice cream sandwiches and stacked them so that they would eventually resemble a cake. I would have liked to have covered it with frosting but the frosting had milk in it. So I watered down some marshmallow whip and put it in between the layers and all over the top of the cake.

Katie decorated the top of the cake.

It wasn't the most beautiful thing in the world but it worked in a pinch and was actually quite tasty.

My name is being used fraudently to ill represent me. Please be cautious of any information you receive with my name. including,,, anything from anyone claiming to be Engi Nowaira online. Otherwise, I will be representing myself in person so that everyone will have opportunity to identify me in person.
My previous drivers license was also stolen. The new one has extra security features on it.
Eggs can be replaced with milled flax seed. You can find it in the baking isle and the boxes I get of it have instructions for how much to put to replace eggs or oil.

Melissa - Mommy to Sebastian, born 9/28/07 @ 7 lbs 7 oz and 20.75 in. At docs at 12 months: 27 pounds and 32 in! Good grief! GERD - currently on Prevacid suspension (liquid equivalent of 45 mg a day). Allergic to dairy, soy, eggs, wheat, all treenuts, peanuts, fish, shellfish, peas, sesame, bananas, barley, coconut, dust, dust mite, dog, cat, latex. Seasonal allergies. Oral Allergy Syndrome (OAS). Neocate only - no solids - until further notice (drinks and loves water, too). Loves his doggie, our rescued Treeing Walker Coonhound, Louise, even though he is allergic to her. Louise will make your doctor a homemade pie if you would like her to. PHOTO: We couldn't do a cake on Sebastian's birthday, but that didn't stop him from tossing around the contents of a big bowl of popcorn! He now tries to eat it when we play with popcorn, so no more of that game.... :(
Yes - that is actually ALL we have! Here's one (also dairy and soy free, actually:

1.5 cups flour, 1/2 tsp salt, 1 cup sugar, 1/4 unsweetened cocoa powder, 1 tsp baking soda. 5 tbsp canola oil (can substitute applesauce. I do 1/2 of each), 1 tbsp white vinegar, 1 tsp vanilla, 1 cup cold water.

Combine flour, salt, sugar, cocoa, & baking soda. Mix well. Stir in oil, vinegar, & vanilla. Pour in cold water. Stir until batter is smooth.

This tastes even better if you add 1 cup of chocolate chips, which I do. The Baker's brand contain no dairy.

Bake 25- 30ish minutes @ 350 degrees in a square pan (9x9 works well).

I made this all the time before I even knew Sebastian had all his allergies. It also makes good cupcakes for little kids...

You can substitute egg replacer for eggs in the Nestle Tollhouse chocolate chip cookie recipe. I do that all the won't even notice a difference.

Happy baking!!!
