I know you always talk about a special bread you make for coy that is full of hidden veggies. If it isn't too much trouble, would you post the recipe? Or just steer me in the right direction and I will look for one online! :) Is it like a basic zucchini bread type recipe?

Coyle Eagan. One Year Old. Doing well on Cow's Milk flavored with juice :) Drinking two bottles of Go&Grow daily. Eating solids better but still have rough days. No More Silent Reflux-that I can hear anyway.. but puking again. Zantac 2ML 2X daily.
I'd love to give it to you! It is basically a regular zucchini bread recipe but i just add about 2 shredded carrots and 1 shreaded apple to it and use a little less zucchini..of course, i probably ruin the nutrition by lapping butter on it but .. doctor's orders, lol...
3 cup flour
1/4 tsp baking powder
3 eggs
2 cu sugar
1 tsp salt
1 cup veg oil ( you can always sub applesauce here but i use canola)
3 tsp cinnamon
3 cup shredded zucchini.. here i use about 2 cups and then add my carrots and apples in place for a variety of vitamins

Preheat to 350 degrees. Wash and Shred your Veggies & Fruit. Lightly grease 2 Loaf Pans ( i spray with canola spray). Stir together dry ingredients in Large Bowl. Beat eggs in large bowl. Add wet ingredients and shredded veggies/fruits to eggs and mix. Then add to dry ingredients. Pour into loaf pan.

Bake 50-70 minutes until top is crusty brown and toothpick comes out clean.

Apple Bread
Here is another.

4 eggs
2 cups sugar
1 cup vegetable oil
1 tsp salt
1 tsp vanilla
1 tsp baking soda
3 cups flour
3 cups apples (my mom's recipes says sliced thin but i've always just shredded and it comes out fine.. just use a little less than 3 cups).

Preheat to 300 degrees. Combine ingredients and mix with electric mixer. Batter into 2 greased and floured loaf pans. Bake 75-90 minutes until brown and toothpick comes out clean.

Keep this one in fridge too.

You can probably add different stuff to this as well. I bet carrots would be good in this one.. you could probably hide some pureed squash or sweet potato too.. i might try this next week..

Melissa - Mommy to Sebastian, born 9/28/07 @ 7 lbs 7 oz and 20.75 in. At docs at 12 months: 27 pounds and 32 in! Good grief! GERD - currently on Prevacid suspension (liquid equivalent of 45 mg a day). Allergic to dairy, soy, eggs, wheat, all treenuts, peanuts, fish, shellfish, peas, sesame, bananas, barley, coconut, dust, dust mite, dog, cat, latex. Seasonal allergies. Oral Allergy Syndrome (OAS). Neocate only - no solids - until further notice (drinks and loves water, too). Loves his doggie, our rescued Treeing Walker Coonhound, Louise, even though he is allergic to her. Louise will make your doctor a homemade pie if you would like her to. PHOTO: We couldn't do a cake on Sebastian's birthday, but that didn't stop him from tossing around the contents of a big bowl of popcorn! He now tries to eat it when we play with popcorn, so no more of that game.... :(
Kelly - I wanted ot answer your question. No, I totally don't think Coy is ready to give up his two naps - but it sort of sounds like he is going to anyway. You and I seem to have had the same battle for a few months now...too much inconsistent sleep. I finally got to the point where I couldn't take it any more (I really do try for an hour for each nap because CIO doesn't work for us). Now I know he will take at least one good nap without a battle because he is so freaking tired. Yesterday, Sebastian got up at 6:10 and then napped from 11-1. I had to go, go, go in the a.m. - played upstairs, played downstairs, played in the basement, went for a ride in the wagon, then went to the library for story. I was as pooped as he was. Then he was raring to go for the rest of the day and actually welcomed his 6 p.m. bedtime. Now, he woke up all night long again, but I really don't think it was from overtiredness. He has a huge stye, and he is teething like a mo' fo', so maybe that is it? We have his check-up today and his appt with the ENT tomorrow, so maybe I'll get some advice for us. I will keep you posted!!!!!!!

How was last night?

Can you come bake me something? My mouse ate all my potato starch, brown sugar, powdered sugar, egg replacer, rice flour, marshmallows, and graham crackers, so now I have nothing.

THANK YOU!!!! I'm going to make that this weekend. I also wanted to thank you for mentioning that you make french toast for Coy. I did that today for the first time and she just looooooved it. I figure-whole wheat bread, eggs, milk and some sugar/cinnamon and powdered sugar (ok just a little) it helps a little, right? :)
